The only reason the honey got lost was I only put a small amount on the sandwich. I was afraid that it would overpower the other tastes, so instead, it was not enough. However, I am okay with that as the sandwich was very yummy and I am not sure honey is truly needed.

I personally think that honey and goat cheese are a massively good combination, but I can see how it might have been one to many tastes in the particularly outstanding Grilled Shane moment! GREG

Fabulous combination, Shane! Mouth is watering. Next up, dip the whole thing in batter and fry that puppy up. (If it's okay to fry it and still call it "grilled cheese!")

Have to share: my "secret words" for posting this comment are 6-foot-1 schlitz. Just made my whole day!

It definitely would be perfect for a weekend brunch. Great suggestion! I have never thought about using thyme in a grilled cheese but it does sound interesting. I will have to try it. It seems like goat cheese and honey are common pairings.

I could have sworn that I left a reply but it looks like it never went through. Sorry about that.

Thanks so much for the nice comment. I am really glad that Jess told you about the site and now that you are hooked. Keep your eyes peeled as I do hope to blog a little more regular in the coming weeks!

That sandwich looks like it would make for a great weekend brunch dish! Another combination with goats cheese that I came across lately is goats cheese, honey and apple and thyme. Haven't tried myself yet, but am intrigued.
